乳清蛋白簡介:
乳清蛋白(whey protein)被稱為蛋(dan)白王(wang),是從牛奶中提取的(de)一(yi)種蛋白質,具(ju)有營(ying)養價值高、易消化吸收(shou)、含有多種(zhong)活性成(cheng)分等(deng)特(te)點(dian),是(shi)*的人體蛋白質補充劑之一。
乳(ru)(ru)(ru)清(qing)(qing)蛋(dan)(dan)白(bai)質(zhi)(zhi)是指溶(rong)解(jie)分(fen)(fen)(fen)散在(zai)乳(ru)(ru)(ru)清(qing)(qing)中(zhong)(zhong)的(de)(de)(de)蛋(dan)(dan)白(bai),約占乳(ru)(ru)(ru)蛋(dan)(dan)白(bai)質(zhi)(zhi)的(de)(de)(de)18%~20%,可分(fen)(fen)(fen)為熱(re)(re)穩(wen)定(ding)和熱(re)(re)不(bu)穩(wen)定(ding)乳(ru)(ru)(ru)清(qing)(qing)蛋(dan)(dan)白(bai)兩(liang)部分(fen)(fen)(fen)。乳(ru)(ru)(ru)清(qing)(qing)液在(zai)pH=4.6~4.7時(shi)(shi)煮沸20min,發生沉淀的(de)(de)(de)一類蛋(dan)(dan)白(bai)質(zhi)(zhi)是熱(re)(re)不(bu)穩(wen)定(ding)的(de)(de)(de)乳(ru)(ru)(ru)清(qing)(qing)蛋(dan)(dan)白(bai),主要包括乳(ru)(ru)(ru)白(bai)蛋(dan)(dan)白(bai)和乳(ru)(ru)(ru)球蛋(dan)(dan)白(bai);而不(bu)沉淀的(de)(de)(de)蛋(dan)(dan)白(bai)質(zhi)(zhi)屬于(yu)(yu)熱(re)(re)穩(wen)定(ding)蛋(dan)(dan)白(bai),這類蛋(dan)(dan)白(bai)約占乳(ru)(ru)(ru)清(qing)(qing)蛋(dan)(dan)白(bai)質(zhi)(zhi)的(de)(de)(de)19%。在(zai)中(zhong)(zhong)性乳(ru)(ru)(ru)清(qing)(qing)中(zhong)(zhong)加飽(bao)和硫(liu)酸銨(an)或(huo)飽(bao)和硫(liu)酸鎂(mei)鹽析出(chu)時(shi)(shi),呈溶(rong)解(jie)狀態而不(bu)析出(chu)的(de)(de)(de)蛋(dan)(dan)白(bai)質(zhi)(zhi)為乳(ru)(ru)(ru)白(bai)蛋(dan)(dan)白(bai),能析出(chu)而不(bu)呈溶(rong)解(jie)狀態的(de)(de)(de)則(ze)屬于(yu)(yu)乳(ru)(ru)(ru)球蛋(dan)(dan)白(bai)。
